Bangus or milkfish is a classic pairing for sinigang in the Philippines. Instead of making a soup, we used our sinigang powder in place of salt to season the fish.

Fry-Steam Fish Sinigang
Serves 2-3.
Ingredients
1 tbs Kusi sinigang seasoning
1 lb fish fillet (we used boneless milkfish belly, one of our faves!)
1/2 lb grape tomatoes, halved
1/4 medium onion, sliced
Neutral oil
Directions
Pat fish dry on the skin-side or the side you'll be frying
Heat oil in cast-iron or any non-stick pan
Over medium heat, place fish in pan and fry 5 minutes
Sprinke Kusi seasoning then top with tomatoes and onions
Lower heat and cover to steam about 3 more minutes
Serve with rice or greens.
