PORK BELLY SISIG PIE



All pizzas are welcome. This is pizza inclusivity. Grab any pizza dough you can find at the store or try any recipe you see online. You can go round or make it squares. This will be delicious either way!

PORK BELLY SISIG PIE

Serves 2-3. You can use a pizza steel-peel combo or just bake this straight in any large sheet pan.


Ingredients​​

  • 1 tbs Kusi sisig seasoning, more for dusting

  • 1 pizza dough, room temperature

  • 1 slice pork belly, about 1/8" thick

  • 1 tbs butter

  • 1 tbs flour

  • 1/2 cup milk

  • 1/2 cup mozzarella cheese, grated/shredded/pulled into small pieces

  • 1/2 medium red onion, cut into rings

  • 1 long green pepper (sub any spicy pepper you like), cut into rings

  • salt to taste



Directions

  1. Preheat oven to the hottest setting, this is usually around 500ºF for a home oven. If you have a pizza steel/stone, put it in the oven now.

  2. Coat pork belly slice fully in Kusi sisig seasoning. You can do this a day ahead and leave in the fridge to marinate.

  3. In a small sauce pan over low heat, heat butter until melted. Add flour and cook for about a minute.

  4. Add milk and simmer on low until thickened into a white sauce. Salt to taste. Let cool (you can add a dash of milk later on to loosen it up).

  5. In a cast-iron pan over high heat, sear pork belly about 3 minutes on each side or until nicely browned then turn down heat. Once cooked through, remove from pan and rest a few minutes before chopping into small pieces.

  6. Toss onions and peppers in the pan to coat in pork belly oil.

  7. Lightly flour your sheet pan or pizza peel, if using.

  8. Shape and stretch out dough on the floured surface taking care to leave the edges for crust. Brush the dough with pork belly oil.

  9. To dough, add white sauce, chopped pork belly, shredded cheese, most of the peppers and onions, reserving some for garnish.

  10. Place sheet pan in oven and cook for about 15 minutes. If using a pizza peel, transfer to your pizza steel/stone and cook about 10 minutes.

  11. Finish with a dusting of Kusi sisig seasoning and the rest of the peppers and onions.

  12. Slice it up and enjoy!
