We now store any firm/extra-firm tofu in the freezer then thaw in the fridge a few hours or the day before cooking. This makes the texture bouncier + increases shelf life so we're not worried about having to use it up right away!

The freezing process changes the structure of the proteins in tofu, giving it a meatier texturE AS WELL AS EXTENDING ITS SHELF LIFE.
